Today I’m really excited ’cause I’m gonna be sharing a fun breakfast idea for busy moms.
I’m gonna be making Liam’s favorite protein pancakes, which consist of two bananas, two eggs, and oatmeal.
You blend that together, and you can actually make that the night before and just heat it up, and it’s so perfect.
And I’m also pairing it with an avocado, ’cause Liam loves this as a side, and Jimmy Dean Fully Cooked Sausage that only takes 45 seconds to cook, so no need to worry about it taking too long. I also wanna think Jimmy Dean for sponsoring and collaborating with me on this video.
So let’s go ahead and get started.
For the protein pancakes,
you’ll need two bananas, two eggs, and a quarter cup of oatmeal.
Just place all those ingredients into a blender, and mix until it’s a batter consistency.
I’ve been making these for Liam ever since he was young, and they’re just so delicious and sweet, and they have such a great consistency to them. And you can also make them mini size, which is perfect for young kids.
So go ahead and pulse like I mentioned, and you want the consistency to be like a pancake batter, so it’s not gonna be too thin or thick. You’re gonna go ahead and butter up a griddle or a nonstick pan, and pour the pancake batter.
I chose to pour it into small, little pancake sizes for Liam, because it’s a perfect hand size, and then after about two to three minutes, you’re ready to flip over and cook each side.
Once the pancakes are done, I add about three on his plate, and save the rest for another day.
And then I add Jimmy Dean Fully Cooked Sausages. They’re super quick and easy to make, because they’re already fully cooked, and they make a great, warm breakfast option.
You just place three onto a plate, cover it with a paper towel, and microwave for 45 seconds.
While the sausages are in the microwave, I cut up an avocado for Liam, because it’s his favorite breakfast side choice, which is super great. I cut it up in little cubes, and I scoop it with a spoon.
And here’s a hack, to keep leftover avocados fresh, is to keep the pit in the unused half before putting it in the fridge, and cover it with foil, and it’ll keep it nice and fresh.
The sausages are ready, I place it on Liam’s plate, and it is breakfast time!
